BirkeSød is a white, crystalline substance xylitol, which looks and tastes like sugar. Xylitol has 40% fewer calories than sugar and is a sugar alcohol found naturally in high-fiber trees, fruits, vegetables. Birch Sweet, made from birch trees, is most often used as a caloric sweetener. The starting material for the production of xylitol comes from hardwoods - predominantly birch and beech. Xylitol is not converted to acid by bacteria in the mouth and is therefore also very popular as a taste factor in chewing gum.
