The fennel plant is related to dill and parsley, and its leaves have great similarities to dill. The most intense flavor is found in the seeds, which have a mild and slightly sweet taste reminiscent of licorice or anise. The whole fennel seeds can i.a. used for tea, schnapps and as a spice in cooking. Especially in Italy, the seeds are used diligently in i.a. fennel sausage, fish dishes, meat dishes with lamb or beef, soups and salads. Fennel can be bought both as whole, dried seeds and as crushed powder. The most intense taste is obtained from the whole seeds. The taste is intensified if the seeds are roasted on a dry pan before they are crushed and added to the food, but they can also easily be used as they are. Fennel originates from West Asia and the Mediterranean, where the plant has been used as a spice since ancient times.

Instructions

2 tsp. seeds per cup of boiling water. Strain with tea filter. Pulling time 5-10 min.
