Sea buckthorn jam

 

Sea buckthorn jam is perfect for August. You often see many shrubs with sea buckthorn on the beach which are ready to pick and which you can use for home-made jam, for example. We give you here an easy recipe for the most delicious sea buckthorn jam.

  You will need it for approx. 1 kg. jam:  2 unsprayed lemons 1 kg sea buckthorn 2 dl water 700 g sugar 1½ teaspoon red melatin Grate the peel of the lemons and squeeze the juice out of them. Put the sea buckthorn in a saucepan together with the lemon juice and water. Bring to the boil and simmer for 5 minutes. Blend it all so that the kernels are crushed. Sift it back into the pan. Use a fine sieve and discard what is left in the sieve. Add the sugar except 2 tablespoons. Bring the pan to a boil again and let it simmer for 10-15 minutes while the impurities are foamed away. Stir the last sugar with melatin and sprinkle it in the jam together with the lemon peel. Stir the jam regularly and let it simmer for a few minutes before pouring into scalded glasses. Let them stand for a moment before putting the lids on.
