Black eye beans, or black-eyed beans, as they are also called, are small and off-white with what looks like a small, black eye.
They are good in salads, in soups or as a side dish.
Black eye beans belong to the legume family, and therefore have a high content of proteins, dietary fibre, vitamins and minerals. That is why black eye beans are also often used in meat-free and vegetarian dishes.
When cooking, the beans must be soaked for 10-12 hours. Make sure you have plenty of water.
The beans are then boiled in fresh water for half an hour. After cooking, you can also choose to marinate or roast the beans.
