There are lectins in mung beans, so they usually have to be soaked and the water discarded. However, the sprouts do not have the same needs, as enzymes are activated during germination to break down starch, storage proteins and protein-containing anti-nutritional factors.
The breakdown of storage proteins is necessary to form peptides and amino acids to stimulate seed and plant growth. Protein-containing anti-nutritional factors such as lectin is present in the seeds to protect them from predators.
But through germination, they are broken down by the enzymes, which is why there is no longer a need for the same handling as ordinary mung beans. In other words, mung beans for germination must therefore not be soaked for that reason.
However, they still need to be soaked.
Course of action:
1. Soak the seeds for 10-12 hours. Remember to change the water along the way.
2. Put the seeds in a sprout container and spread them evenly.
3. Rinse with fresh cool water two to three times daily throughout growth.
4. Due to lectins in beans, the beans must grow for a minimum of four days or until they have set a small sprout of 1 cm. Depending on the variety, it takes up to eight more days for the first leaf to unfold.
